Braised beef short ribs

I made these just last night and my husband was asking for seconds! This is one easy meal. I love using my slow cooker. Its easy to throw something in while the baby naps and not have to worry about dinner.
Serves 4Prep time 15-20 min
Cook time 4-8 hours (the longer the better)
2 pounds of beef short ribs (we prefer grass fed beef)
4 medium potatoes
4 carrots
3 ribs celery
1 large onion
1 bunch of radishes
3 cloves garlic crushed
1/4 cup flour
1 tsp paprika
1/4 cup olive oil
1/2 cup white wine
1/4 cup balsamic vinegar
2 tablespoons worshtershire sauce
salt and pepper to taste
Preheat your slow cooker.
Meanwhile roughly chop carrots, celery, onion and radishes. Place whole potatoes in the bottom of the slow cooker. Throw the rest of the veggies on top along with crushed garlic.
Salt generously.
Sprinkle the ribs with paprika, salt and pepper. And cover with flour.
Heat olive oil in a large pan and sear the ribs on each side. Be sure not to over crowd the pan.
When they have a nice crusty sear move them to the slow cooker. Pour the hot olive oil over the meat and vegetables. Deglase the pan with the wine, vinegar and worshtershire sauce.
Pour over the meat and cook on high 4-8 hours.
They will become tender and should fall off the bone. The longer you cook them the better.
